After a long time of working in the shadows with two great traveling companions such as the cattle breeding Mugarrieta Ganadutegia of Hondarribia and the meat processing plant Rekarte Meats of Irun we have the great pleasure as Garrancho Group and Restaurant Fermín Calbetón to offer you something unique and very special in the world of gastronomy in the heart of the old part of Donostia, San Sebastian. You will be able to enjoy the spectacular Txuletones and other cuts of an Alistana Sanabresa beef born 11 years ago in Orio and raised in Hondarribia. It was slaughtered on March 27th in San Sebastian, reaching a carcass weight of 581 kg, with chops of about 55 kg each. PURO KM0 TOP TXULETONES are coming!
THE CARNIVOROUS GASTRONOMIC DAYS BEGIN ON MAY 12 at Fermín Calbetón Restaurant, so the txuletones will have approximately 40 days of Dry Aged maturation. In addition to the Txuletas you will be able to enjoy a gastronomic Menu for 68,00€ per person. Reservations are required and the menu detailed below is for a full table with a minimum of two people.

Carpaccio of Picaña Carpaccio marinated in house and Idiazabal with bread glass and Aove

Consommé of oxtail with oloroso sauce and cheeks

Steak Tartar and grilled marrow

Brioche roll perfumed with smoked butter, stuffed with beef stew with kimchi mayonnaise

Grilled beef fillet with Gernika peppers, potatoes and green salad
